BAP Shrimp Taco Boats Recipe

Ingredients

Shrimp:

2 teaspoons chili powder

2 teaspoons cumin

½ teaspoon garlic powder

½ teaspoon cayenne pepper

2 Tablespoons olive oil (separated)

1½ pounds BAP-certified raw shrimp, deveined & shelled

 

Salsa:

1 cup corn, (thawed if frozen)

½ red onion, diced

1 can black beans, drained and rinsed

1 cup diced tomatoes (I used cherry)

1 diced jalapeno

1 diced avocado

1 Tablespoon minced garlic

¼ cup chopped cilantro

1 lime juiced

Salt and pepper to taste

 

Optional Toppings:

Lettuce, shredded cheese, sour cream, or hot sauce

 

Instructions

Salsa:

In a medium sized bowl mix the corn, black beans, red onion, tomatoes, jalapeno, avocado, garlic and lime juice. Season with salt and pepper to taste.

Shrimp:

Mix the spices together in a small bowl. Pour 1 tablespoon of olive oil and spices over thawed shrimp. Hand mix.

In a large skillet over medium-high heat add 1 tablespoon olive oil. Add the shrimp and sauté until cooked through, about 3-5 minutes (depending on the size). Remove from heat.

Fill your boats with salsa and shrimp. Add any of the toppings that you wish.
